5 Ingredient Breakfast Burritos

Breakfast burritos that are packed with flavor, and better than the drive-thru. With just 5 ingredients, it's easy to make a batch ahead of time for an on-the-go breakfast.

Ingredients

  • 4 large tortillas
  • 8 eggs, scrambled
  • 1 cup shredded cheese (cheddar, pepper jack, or Mexican blend)
  • 4 bacon slices
  • 2 cups cubed hashbrowns
  • optional: bell peppers, onions, or salsa for topping

Instructions

  1. Scramble eggs over medium heat. Add cheese and salt and pepper to taste. (Plus peppers and onions if using.)
  2. Cook hashbrowns and bacon seperately.
  3. Warm tortillas and make burritos by placing 1/4 of egg, hashbrowns, and bacon in each.
  4. Roll into burritos and serve, or save for later by wrapping individually in plastic wrap, and placing in a Ziploc bag. Freeze for up to 2 months.
