Breakfast burritos that are packed with flavor, and better than the drive-thru. With just 5 ingredients, it's easy to make a batch ahead of time for an on-the-go breakfast.
Ingredients
- 4 large tortillas
- 8 eggs, scrambled
- 1 cup shredded cheese (cheddar, pepper jack, or Mexican blend)
- 4 bacon slices
- 2 cups cubed hashbrowns
- optional: bell peppers, onions, or salsa for topping
Instructions
- Scramble eggs over medium heat. Add cheese and salt and pepper to taste. (Plus peppers and onions if using.)
- Cook hashbrowns and bacon seperately.
- Warm tortillas and make burritos by placing 1/4 of egg, hashbrowns, and bacon in each.
- Roll into burritos and serve, or save for later by wrapping individually in plastic wrap, and placing in a Ziploc bag. Freeze for up to 2 months.
