Easy Fall Crockpot Recipes

1. Apple Cider Pork Roast

This savory pork roast stews in sweet and tangy apple cider, soaking up delicious autumn flavors as it slow cooks. A no-fuss way to enjoy that classic fall taste without fussing over a bunch of ingredients, it makes your house smell great too!

Ingredients:

  • 2-3 lb pork shoulder
  • 2 cups apple cider

  • 4 cups butternut squash, peeled and cubed (fresh – some stores sell it prechopped, fresh or frozen)
  • 1 onion, chopped
  • 3 cups chicken broth
  • 2 cloves garlic, minced
  • Optional additions: can of crushed or diced tomatoes, 1 bell pepper, cut into chunks, or chopped spinach, added only for the last 30 minutes of cook time

Directions:

  1. Slice sausage and add it to crockpot with the remaining ingredients
  2. Cook on Low for 6 hours
  3. Stir, then serve in bowls

Ingredients:

  • 2 chicken breasts
  • 1 can enchilada sauce
  • 1 can diced tomatoes with green chiles
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • Salt and pepper to taste

Directions:

  1. Add everything to the crockpot and stir.

Pulled Pork is an all-time favorite that gets easier with the crockpot. Perfect for fall Game Day festivities, and tastes delicious as sandwiches, or over baked potatoes and even salads for dinner.

Ingredients:

  • 3 lb pork shoulder
  • 1-2 cups BBQ sauce
  • 1 onion, sliced
  • ½ cup apple cider vinegar
  • Salt and pepper to taste

Directions:

  1. Rub pork shoulder with salt and pepper.
  2. Place pork and sliced onion in the crockpot, and pour apple cider vinegar and half the BBQ sauce over top.
  3. Cook on Low for 8 hours.
  4. Shred pork with forks, then add in remaining BBQ sauce and stir all together.
  5. Serve on buns, over rice, baked potatoes, or with your favorite sides.

15. Chicken Tikka Masala

Creamy, spicy Chicken Tikka Masala feels like fancy takeout but is crockpot simple. Tender chicken simmers in an amazing tomato and cream sauce infused with warming spices that fill your kitchen with those amazing aromas all day. 

Ingredients:

  • 1.5 lbs chicken breast, cubed
  • 1 onion, chopped
  •  2 cloves garlic, minced
  • 1 tbs garam masala
  • 1 can diced tomatoes
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste

Directions:

  1. Put chicken and onion in crockpot, and stir in garlic, garam masala, and tomatoes.
  2. Cook on Low for 7 hours.
  3. Add cream, stir well, and cook 15 minutes more.
  4. Serve over rice with Naan bread

16. Slow Cooker Stuffed Peppers

  • 4-5 large bell peppers, with tops cut off and seeds removed
  • 1-2 cups cooked rice (the microwaveable packets are so easy!)
  • 1 can diced tomatoes
  • 1 can black beans, drained
  • 1 packet taco seasoning
  • Optional: 1 lb cooked ground beef, turkey, or chicken

Directions:

  1. Cook ground meat in a pan (if using)
  2. Combine tomatoes, black beans, cooked rice and taco seasoning packet with a splash of water (and cooked meat, if using)
  3. Fill peppers with mixture and place in slow cooker, standing up.
  4. Add about 1/2 cup water or broth to bottom of slow cooker so it’s not dry.
  5. Cook on Low for hours or High for 3 hours, until peppers are tender, and serve warm.
  6. Optional: Sprinkle peppers with shredded cheese, then replace lid until melted.

17. Creamy White Chicken Chili
